After borrowing it from the library, I knew it was written for where I am in my current-diet-train-of-thought. It is based on “vegan transitional” recipes, those that contain light ingredients with some raw or partially raw recipes. The first recipe in the book is Radical Roasted Red Pepper Hummus. The WHO (World Health Organization) says humans need about 5% of their daily calories to come from protein to be healthy. The USDA puts this figure at 6.5%. On average, fruits have about 5% of their calories from protein. Vegetables have from 20-50% of their calories from protein. Sprouted seeds, beans, and grains contain from 10-25% of their calories from protein. So if you are eating any variety of living plant foods, you are getting more than adequate protein.

** So now that I am reconsidering my idea of moving to L.A. I want to write again a manifestation as if I had acomplished the dreams that I currently have, so here it is! I hear this is a powerful manifestation tool! **
So much has happened in the past 2 years since I decided to stay in Fayetteville! I have really created the community that I’ve been craving all these years and I feel very nurtured and loved and supported! I love having friends who know me so well that when I’m feeling down they come by to cheer me up and offer help and when one of my friends needs help like that we all pitch in and come to the rescue too. Whether it’s a heart break someone is feeling or someone is facing a health crisis or they are just having a few down days, we are a group of friends who rally around to help. I used to see this kind of thing on T.V. shows and in movies but was never quite sure if it really happened to people in real life and I am happy to report that it does!

Last night Janis and I tripped over to Bloor and Bathurst to check out this amazing place called
Toronto Sprouts
. I had put it out there that I need to learn how to sprout and where to buy supplies and this awesome man from Michigan sent me an email with a bunch of information, part of which led us to Toronto Sprouts.
As soon as we walked in we immediately fell in love with the place, there was such an amazing vibe! After trying raw chocolate, eating handmade raw vegan chocolates, we finally worked our way to the sprouting supplies. It was like Xmas!!! The best part though was when we started chatting with a lady who works there named Robin. She was amazing. She is a Raw Foodist and gave me tonnes of ideas! She’s really inspired me to not only do the 30 day challenge but work as hard as I can to stay raw afterwards!

I’m starting to settle in to a more rural life in Three Rivers. Riding my bicycle through the winding streets this morning was pure bliss. Coasting downhill with the breeze in my face, I closed my eyes in sheer reverie for a breath so delicious that I have no doubt someone in a stuffy PR firm is trying desperately to market it. Even my digestion has improved in the two short weeks since I arrived. I’ve been on a bit of an emotional rollercoaster but also completely fascinated by mother nature and the tides of change that push and pull at me with magnetic force in this place.

I invested an entire year in learning about nutrition, exploring both a vegan and a raw ‘living-food’ lifestyle. What did I learn? For one, eating is an integral part of who I am. Only when I live in an extremely supportive community could I make such a radical shift. Even though I know ‘intellectually’ what is more healthy, the pleasure and social expedience of local foods out weighs my ‘knowledge’ of health.

So I am going to a raw vegan pot luck tonight and had to figure out how to “cook” something raw. Yeah, I eat raw veggies and fruits and salads, but I’ve never done raw per se. After an hour or so of fruitlessly looking online for recipes I could make on only a few days notice I gave up and just started thinking in terms of what I had in my fridge and came up with this. It’s diced carrots, red bell peppers, and red onion, with avocado/garlic sauce wrapped in collard leaves. So far my taste testers say they are good! I’ll see what the pot luck goers tonight think. I don’t think it’s terribly creative, but I am still pleased.
